Liver is nature’s ultimate superfood, and for that reason we recommend that everyone get at least some in their diet.
Even if you hate liver, or have picky eaters to feed, this method of making frozen liver cubes, while at first a little unappetizing to make, is a totally painless way to hide liver in ground meat. You (and your family) will never be able to know it’s there!
The trick is grinding the liver yourself using a food processor, then filling up an ice cube tray with the ground liver, freezing it into liver cubes.
Whenever you cook up a batch of ground meat, you can easily pop one liver cube into the mixture and mix it in thoroughly.
By doing this, you give your body a burst of rich nutrients like Vitamin A, B vitamins, folate, choline (good for your brain), and iron―without the taste or texture! These nutrients support your metabolism, immune system, and stress resilience.
This method works for loose ground meat like for tacos, meatballs, meatloaf, or any other way you make ground meats. I make hidden liver sausage patties using this exact method.
